In 1959, he began work as an apprentice at the Edomae restaurant Yoshino. In 1966, he came to Seattle and worked as a sushi chef at Tanaka, a Japanese restaurant. In 1970, he moved to Maneki, and in 1972 he opened his own restaurant, Nikko. In 1987, he sold Nikko.
